If you’re in luck, your toddler’s playschool or for that matter youtube would have introduced the little one to “the muffin man’ song. Great news then! Because their innocent minds take to new words like “muffin” and hence the actual thing with much gusto. And evil moms like me, please capitalise on this and shove all the fruits you can into it and smile smugly as they eat it with junk food greed.
I call them evil because they have multiple fruits, no sugar, some all purpose flour and no guilt.
Oh and I plan to tell her the whole truth about the muffins only when she’s 21.
And I also plan to write some more Evil Mum recipes. Let me know what you think of that!
Here’s my recipe for Evil Mum Muffins ….shshhhhh!!
Yeild- 12 small muffins
1cup whole wheat flour (I use a coffee cup or builders tea cup)
1/4 cup Maida or all purpose flour.
2 tablespoons honey (optional if the bananas are over ripe and hence sweet anyway)
1/4 teaspoon powdered cinnamon
1/4 teaspoon grated nutmeg
1/4 cup melted butter (Butter is good, especially if you’re a toddler. Or French)
1 egg (optional- if you skip the egg, add a little more fruit puree- about 2 tablespoons more of any fruit)
2 tablespoons milk
1/2 cup pureed apples, chikoos, custard apple, mango (pulpy fruit basically)
1 cup banana puree (over ripe is better)
2 teaspoons baking powder
1 teaspoon baking soda
1/2 cup mixed dark and white chocolate chips (C’mon you’ve put wholewheat flour, some of the good stuff’s ok)
Pre heat the oven to 180 for 10 minutes. Sift the dry ingredients- flours, spice powders, baking soda and baking powder in a bowl.
In another bowl, mix the wet ingredients- honey, fruit purees, whisked egg (if using) and milk.
Add the dry ingredients to the wet and fold in till thoroughly incorporated. Fold in the chocolate chips. It tends to be a slightly wet batter- but that’s ok. If you think it’s too runny, add a tablespoon of flour. Spoon into greased muffin pans and bake at 180 for 40 minutes. If your muffin moulds are very small, I suggest you turn the oven to 170 and bake for 45.
Remove from the oven and let them cool on wire racks.
These muffins don’t have the rise of the regular muffins since they are wholewheat, but they do taste great and you wouldn’t know the difference.
To make it even more toddler proof- dip each muffin in some melted chocolate. White or milk and add some sprinkles for eye appeal!
